
I haven’t been posting recipies lately because I’ve been experimenting and finally came up with a Chicken Vegetable soup recipe that is a keeper! Sprinkle some parmesan on top and pair with whole wheat pita dipped in garlic hummus for a satisfying meal.
Ingredients
1 lb Chicken Breasts
1 small Onion
3 small Carrots
2 ribs Celery
3 Tbs Garlic
1 lb Tomatoes
1 cup frozen corn
1 cup frozne green beans
2 Tbs Olive Oil
1 Tbs Worcheshire Sauce
1 Tbs Alegro Marinade
1 Tbs dried Parsley
1 tsp dried Basil
1 tsp dried Oregano
1 bay leaf
6 cups chicken bone broth
Preparation
- Rinse the chicken breasts and pat dry. Salt and pepper both sides.
- Wash the carrots and slice. Should have about 1 cup.
- Wash the celery and slice. Should have about 1 cup.
- Wash the tomatoes and dices. Should have about 2 cups.
- Peal the onion and dices. Should be about 2 cups.
- Mince the garlic.
- Measure out the spices into their own dish.
- Measure out the corn and green beans.
Directions
- Heat the olive oil in a large pot until it is hot but not smoking.
- Saute the chicken breasts in the olive oil until brown, but not cooked through. About 3 minutes on both sides. Set aside.

3. Add the carrots and saute for about 1 minute..
4. Add the celery and continue to saute for about 1 minute.
5. Add the onion and garlic and saute until translucent.
6. Add the tomatoes and saute for about 1 minute.
7. While sauteing the veggies, cube the chicken breasts to bite size pieces.
8. Add the chicken breasts, corn, green beans, bone broth and spices.
9. Simmer for about 30 minutes.
Just a few notes
I like Kettle and Fire Classic Chicken bone broth. You should use a broth that you like. You might be wondering why I use bone broth in all my recipies.
Bone broth is made by simmering the bones with vegetables and spices anywhere from 12 to 48 hours. The long slow simmer gives the broth a richer consistency due to the gollagen that is pulled from the bones. I like the Kettle and Fire bone broth because they add apple cider vinegar which helps extract the nutrients from the bones. Plus all of the ingredients are organic.

- Collagen boost
- Reduced inflamation
- Aids in weight loss
There are some down sides too. Improper preparation can have lead and bacterial contamination. Some of the amino acids and minerals can interact with medications. As always, check the label for ingredients you may be allergic to.
Honestly, I tried Kettle and Fire bone broth by accident thinking I was picking up chicken broth. I loved the flavor and kept using it and found out about the benefits after I was hooked.
