
It’s hard to pick my faorite recipe. I wasn’t going to post any of my recipies, but my brother-in-law gave me the idea. When life throws family or friends a curve ball, I prepare a week’s worth of meals. These meals are easy to heat up. One day a few years back, he suggested I post my recipies on line. So I tried one. Then I posted another. Now I have an entire section that still gets likes.
You will find a lot of fish recipies along with vegetables, soups, and stews on my site. I like fresh ingredients. But I’ve been known to break open the can opener to keep life easy. I try to buy organic veggies and fruits and wild caught fish when available. Many of my soups are easy crock pot recipies.
This week I’m making Chicken Veggie Soup. I am going to try fire roasted garlic crushed tomatoes instead of the 1 lb of fresh tomatoes. I’m also making the Black Beans and Rice. My twist this week is to add a yellow bell pepper and spice it up with chili powder.
For me, it is not simply making the same recipe each time, but experimenting with variations on a theme. Eventually, I get the a solid base to post. I have a new one coming up. Last week I almost had it — Chicken, Kale, and Mushroom soup. Just one more tweak and it will be ready! Stay tuned.
