
If you are looking for something that can easily convert to a vegetarian dish, this is it! All you have to do is substitute the bone broth for vegetable broth. Black Beans and Rice make a great main course. You can have a fruit and cheese side dish to compliment the savory spices. Or you can serve the black beans by themselves as a side dish!
Ingredients
4 15-oz cans black beans, drained and rinsed
4 cups chicken bone broth
3 tablespoons garlic, minced
1 medium onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 teaspoons oregano
1 teaspoon cumin
1/2 teaspoon corriander
1/4 teaspoon red pepper flakes
2 tablespoons olive oil
2 cups of your favorite rice
Directions
Saute the onion, garlic, and peppers in olive oil until soft and translucent.
Add the black beans, broth, and spices. Simmer on low for 30 minutes.
While the beans are simmering, prepare your rice per the package requirements.
Notes
This reciepe makes 8 servings. I like to simply layer the black beans on top of my rice, then curl up on the couch to watch my favorite TV show.
If you want toppers, you can sprinkel with choped cilantro or parsley, or slice some lime wedges and squeeze some lime juice before serving. Also, an alternative to rice would be crusty bread with cheese.
You can also experiment with the spices. If you would like a more mexican flavor, try chili powder, oregano, and red pepper flakes, then top with sliced jalapeno peppers. Instead of rice, you can make black bean nachos!
