Parmesan Crusted Talipia

Ingredients

4 Tilapia Fillets, about 5 oz each
1 lb Sweet Campari tomatoes
4 Tablespoons Pesto
1/2 cup shredded Parmesan

Preparation and Cooking

  1. Rinse fillets and pat dry. Salt and pepper both sides.
  2. Wash the tomatoes and slice in half
  3. Line a baking dish with foil and place the fillets in the pan.
  4. Spread 1 tablespoon of pesto on top of each fillet.
  5. Layer the tomatoes between the fillets.
  6. Bake in a 300 degree oven for about 20 to 25 minutes until the fillets are 125 to 130 degrees internal tempreature.
  7. Take the pan out of the oven and sprinkle 2 tablespoons parmesan on top of each fillet.
  8. Turn the broiler on high and broil the fillets with the paremsan until the parmesan melts and begins to turn slightly brown.

I was shocked at how low the fat was on this recipe after I added it up. I think what makes it so filling is the protien. One thing for sure, you won’t be hungry an hour later!

Just a few notes …

Be prepared to get filled up fast. I found it hard to finish an entire fillet. I think the next time I do this recipe, I will make my own pesto. Be sure the pesto you use is one you have used before and enjoy because that is the strongest flavor. I may cut back on the pesto a bit also just so I can get the flavor of the tilapia.
