
I love garlic. Vampires beware!
I love salmon too! So it’s obvious that I’m really going to enjoy this dish.
If you are not a big garlic fan, you might want to cut back on the garlic. But for me this was just the right amount.
No kidding — garlic has a lot of health benefits. It’s got lots of vitamin C and B6. It has been reported to have antiviral properties to help prevent colds and flu. Garlic has also been reported to reduce blood pressure, choleterol, and lower the risk of heart disease.
Salmon also has health benefits such as a being a good source of vitamin B12, potassium, and vitamin D. It’s also rich in omega-3 fatty ascids that are known to lower the risk of heart disease and Alzheimer’s.
I feel good about this recipe — simple to make, healthy — and REALLY TASTY!

Ingredients
2 salmon fillets, about 6 oz each
6 tablespoons lemon juice
1/5 tablespoon lemon zest
2 tablespoons olive oil
3 tablespoons garlic
2 tablespoons herbes de province
Preperation and cooking
- Rinse the salmon fillets and pat dry.
- Wash the lemon, zest and juice it.
- Mince the garlic cloves

4. Combine olive oil, lemon juice, lemon zest, garlic, and herbes de province in a small bowl.
5. Place the salmon fillets in a baking dish lined with foil and pour the marinade mixture over the fillets.
6. Cover the pan with foil and bake in a 375 degree oven for 15 minutes until the internal tempreature is between 130 and 135 degrees.
Nutrition
While I’ve already expoused the nutritional benefits of salmon and garlic, overall this recipe does come it a bit on the high side for overall fats. Given the benefits of the ingredients, I’ll still give it a pass on the fat content.

Just a few notes ….
Always a critic of my own cooking, I’ll have to say that my salmon turned out just a tad dry. I didn’t check the tempreature soon enough and it came out at 140 degrees. It still tasted good. I think the next time I do this recipe I’m lowering the oven tempreature and will finish under the broiler to get the garlic a bit browned.
