
Next to salmon, halibut is one of my favorite fish for dinner. It is a firm, pristine white fish with a gentle, mild flavor. It easily picks up on the flavors of your spices.
The most interesting thing I read about Halibut is the nutrients.
One article mentioned that a 5 oz fillet can meet almost 1/3 of your dietary needs for selenium, magnesium, phosporus, niacin, B12, and B6. If the nutritional benefits of halibut are true, let’s just say I want to have it as a mainstay in my diet!

Ingredients
4 Halibut fillets, 5 oz each
4 tablespoons lemon juice
2 tablespoons extra virgin oilive oil
1 tablsepoon fresh basil, chopped
1 teaspoon dried oregano
1 teaspoon tried thyme
1 teaspoon minced garlic

Preparation
- Rinse and pat the fillets dry.
- Mix the lemon juice, olive oil, basil, oregano, thyme and garlic.
- Put marinade and fillets in a zip lock baggie and turn until fillets are coated.
- Let the fillets rest at room temperature for 30 minutes turning about every 10 minutes
Cooking
- Line a pan with foil.
- Remove the fillets from the ziplock baggie and place on the pan
- Roast in a 400 degree oven for 12 to 15 minutes until the internal tempreature is between 125 to 135 degrees.
Just a few notes …
Oh my! This has got to be my favorite halibut recipie of all time! The lemon and basil enhance the flavor of the halibut without over powering it. Ok. Yes. I’m a happy camper with this recipe.
If you like strong flavors, this is not a recipe for you. I worked with a lot of folks from India during my career. One thing I learned, every one I knew liked strong , spicy flavors. I could not eat the food they cooked at our pot lucks and they didn’t like my cooking. It was too bland for them. We’re all different. So what works for me, may not work for you.
I did one thing a bit different. I was wisking away in my little bowl and looked over at my magic bullet. Next thing ya’ know, the marinade was in the magic bullet getting truly blended! I think I’m going to magic bullet a lot more marinades!
